We’re not going to lie, quinoa without flavour is so bland, we just can’t face it. We love to be healthy, but we also want to taste bold flavours and our spice mix does just that. Perfect to serve as a side, in wraps, with grilled meat for a hearty meal of goodness.
- 1 cup of chopped Mixed Peppers
- 1 Courgette
- 1 Tomato
- 2 Spring Onions
- 1 cup Quinoa
- 1 teaspoon Nico’s Polle Polle Spice Mix
- Juice of ½ Lemon
Firstly you need to wash the Quinoa to get rid of the bitterness. Cook according to the packs instructions; generally the ration is 1 cup of Quinoa to 2 cups of water, bring to the boil and simmer for 15-20 minutes until the water has been absorbed. Fluff through with a fork. In a saucepan, add the spring onion and courgettes and mixed peppers along with the spice mix. You just want to gently stir fry for about 2 minutes so that the vegetables are still crunchy. Add to the Quinoa then add the lemon, and roughly chopped tomatoes and stir through gently.
