You’ve probably heard that Mushrooms are high in Vitamin D and a vegan substitute for meat. This recipe is great for meat-free Mondays or if you are looking to whip up something that tastes great as a side or to have as a healthy breakfast.
250g Chestnut Mushrooms (or whichever you prefer) 1tsp Nico’s Polle Polle Spice Mix 1 Garlic Clove 1 tbsp Oil Handful of fresh herbs (any that you like)
Clean the mushrooms and slice, in a frying pan, add the oil and add in minced garlic glove. Fry for 30 seconds and then add the mushrooms and the Nico’s Polle Polle Spice mix. Stir-fry for a further 5 minutes so that the mushrooms are al dente. Depending on which mushrooms you use, you might find that they release a lot more water than others, in which case, adjust your cooking time. Serve on freshly baked Ciabatta and garnish with fresh herbs.
