OK, so we know that no interesting story ever started with a salad, and we have heard a few over the years especially at the Pub, where all of our amazing dishes come to life! Anyway, with a New Year, new start, and resolutions to eat healthy we thought we’d start off with a recipe for a salad… Don’t worry, there is more to it than leaves!
- 1 Chicken Breast
- 10 Cherry on the vine Tomatoes
- 10 Button Chestnut Mushrooms
- Handful Baby Spinach Leaves
- Handful Rocket Leaves
- 1 small Avocado
- ½ Teaspoon Nico’s Polle Polle Spice Mix
- Good quality Balsamic Vinegar
- Olive Oil
- Sesame Seed (Optional)
Rub the chicken with Nico’s Polle Polle Spice mix and season a griddle pan with olive oil and cook the chicken on both sides. Once cooked, throw in the mushrooms for a few minutes until warmed throw then add the tomatoes and lightly cook.
On a plate scatter the salad leaves and slice the avocado and chicken and add the mushrooms and tomatoes. Give the salad a good drizzle of olive oil and balsamic vinegar and eat away for that summer body in no time! (Don’t forget the part where you exercise)
