There is something about chargrilled chicken, the flavours work so well especially when there is a kick and a contrast of sweet in every bite. This isn’t a mad mix of various sauces but if you have a particular sauce you like to add to your marinade then just add that in.
- 10 Chicken Wings with the skin on
- 2 Teaspoon Nico’s Polle Polle Spice Mix
- A drizzle of Oil
- 1 Tablespoon Plum Sauce or Runny Honey with a squeeze of lemon
Add the chicken wings in a thick food bag and add the Nico’s Polle Polle Spice Mix, sauce and oil and give the chicken a good massage through the bag - it’s great to avoid washing up! Place in the fridge for at least an hour or overnight if you can.
Light the charcoal and get the right heat, you don’t want to place the chicken on top of a blazing fire otherwise the outer will burn and the inside will stay raw. Place the chicken wings on the grill and cook until nice and brown turning midway. Times will vary for cooking depending on the height of the grill above the coal and the size of the chicken wings.
Serve with your favourite dip and munch away.
