Coconut & Passion Fruit Ice Pops

Every spicy dish needs to have something sweet to tame the heat to finish of a meal. With our sugar free coconut and passion fruit ice pops, which is easy to whip up and perfect as a healthy treat.

Ingredients:

  • 400ml tinned Coconut Milk
  • 3 ripe Passion Fruits
  • ΒΌ teaspoon Lime Zest
  • 200ml Mango Juice

Method:

Shake the coconut milk so the solid part and the water is mixed well. Depending on the size of the moulds you may be able to make 8 ice lollies. In a blender pour the mango juice and passion fruit seeds and gently blitz. Stir in the lime zest and start filling up the ice lolly moulds. We used alternate tablespoons full of coconut milk and fruit to give a marble effect so you can taste bursts of exotic fruits and coconut in every mouth full. Make in advance and this is an ideal treat for BBQ parties or after a workout. Refreshing and delicious!

Makes 6-8 depending on ice pop mould.
