Yikes! Time is of the essence, you are trying to juggle work, life, social, gym, healthy eating all at the same time. And you really want something hearty to eat but just don’t have the time to cook from scratch. With our Fool Proof Curry Sauce base, you can ditch the jars and cook this in bulk and freeze for hearty meals and perk up bland pasta sauces.
Making this sauce in advance in bulk and frozen in shallow freezer Tupperware or freezer bags can be kept in handy portions, ready to whip up a tasty meal for 1 or 10. You can add extra chillies or you can add them when you need to use the sauce depending on the amount of heat you need.
- 6 tablespoons Vegetable/Coconut Oil,
- 8 medium onions finely chopped,
- 6 tablespoons Ginger paste,
- 4 tablespoon Garlic paste
- 3 tablespoons Nicos Polle Polle© Spice Mix
- 2 Tinned Chopped Tomatoes
The more onions you use, the more base sauce you will have for the perfect curry. In a large pan, heat the oil and then add the onions. Keep stirring at regular intervals so that the onions are cooked to a nice golden brown on a medium heat. Add the ginger and garlic and cook for a further 3 minutes. If at this point the onions start to stick, add in a splash of boiling water and lower the heat with the lid on for about a minute. The steam will help lift the bits that are stuck. If it’s burning, the heat is too high. Add in the spice mix and cook for a further 2 minutes, at this point keep stirring so that the spices don’t burn. Add in the chopped tomatoes and bring to the boil, lower the heat and put the lid on. Let the sauce simmer for around 20 minutes, stirring occasionally. The sauce is ready when you can see the oil separate. Cool down and divide into 4 freezer bags. Each bag will serve 4. If frozen in freezer bags, lay flat so that you have a thin layer of sauce, which will easily defrost in the pan when you use it.
Add a little kick to pasta, or pizza bases, add as a base to vegetables, chicken, fish or meat with extra chillies and seasoning as required.
