Kelly's Baked Chicken with Peppers
There isn’t much preparation to this Chicken with peppers as cooked by Unity 101FM presenter Kelly. Marinated overnight this healthy dish is perfect to prepare in advance for any dinner party.
Ingredients:
- 2 Chicken Breasts
- 2 Bell Peppers
- 2 Leeks
- 2 teaspoons Nicos Polle Polle Spice mix
- Pinch of Ground Coriander
- 2 Onions
- 4 chopped Green Chillies
- 1 chopped tomato
- Fresh Ginger
- Fresh Garlic
Method:
Remove the fat of the chicken and dice. Slice the peppers, tomatoes and chop the leeks and onions in 1cm thick pieces. Finely slice the ginger, chilli and garlic. Place all the ingredients onto a baking tray including spices and mix well with olive oil. Cover with oil and marinade overnight. If you prefer you can place all the ingredients in a strong food bag and empty out into a well greased baking tray when ready to cook. In a pre heated oven bake the chicken for approximately 35minutes until cooked though. Remove foil and brown off the chicken and vegetables.
Kelly serves this with boiled brown basmati rice, green salad and a glass of red wine (we wont say no)
