Every time we think of Aloo Gobi, the scene from the film Bend It Like Beckham always comes to mind. It was the phrase ‘anyone can make aloo gobi, but who can bend it like Beckham?’ Well we know we can’t bend it like Beckham but we can make a simple aloo gobi and we will even add our own little zing into the pan. Traditionally a Punjabi dish, this quick and easy to make potatoes and cauliflower stir-fry is a firm family favourite and perfect for ‘Meat Free Monday’ although we don’t mind some mid week.
- 2 medium White Potatoes
- 1 small Cauliflower head
- ½ Broccoli head
- 1 small Onion
- 1 teaspoon Cumin Seeds
- 1 tablespoon Nico’s Polle Polle Spice Mix
- 1 tablespoon Coconut Oil or Vegetable Oil
- Handful fresh Coriander
Peel the potatoes and cut in to 1cm cubes. Wash the cauliflower and broccoli and cut into florets and discard the tough stems. Slice the onion and keep aside. Add the oil to a shallow pan and once heated add the cumin seeds. Once these start to sizzle add in the sliced onion and cook until softened. Add in the potato and partially cook then add in the spice mix. Stir-fry for around 2 minutes then add in the cauliflower and broccoli. Cook through until soft but not mushy then garnish with coriander. Eat with natural set yogurt, which is high in calcium and healthy for the stomach and chapatti, if you can’t make them, any good grocery store will have ready made chapattis that you can heat at home on a frying pan.
