Nico's Polle Polle Chicken
Indian food generally does not have measurements and it consists of an estimate by eye. Give a recipe to 5 different people and we know that neither of them will taste exactly the same. The Nico’s Polle Polle Chicken will leave your mouth watering with the perfect mix of spices and tender chicken.
Ingredients:
- 2 tablespoons Vegetable/Coconut Oil,
- 2 medium onions finely chopped,
- 2 tablespoons Ginger paste,
- 1 tablespoon Garlic paste
- 4 teaspoons Nicos Polle Polle© Spice Mix
- Tinned Chopped Tomatoes
- 2 tablespoon Natural Yogurt
- 700g Boneless Chicken cut into chunks (breast/thigh is fine)
- 2 tablespoons Dried Fenugreek leaves
- Green Chillies to taste (if needed)
- Handful Washed and chopped Coriander
Method:
Heat the oil in a pan and add the onions. Fry until golden brown then add the ginger and garlic paste. Add the chicken and cook until all sides are white. Sprinkle over Nicos Polle Polle© Spice Mix and cook for about 3-4 minutes, stirring continuously. Once the spices become a little stick add in half a tin of chopped tomatoes. This should have a thin layer of tomatoes on top of the chicken. Add more if needed. Stir well and cook for about 15-20 minutes. Times will vary depending on the size of the chicken. Add a dollop of natural yogurt, which is great to add creaminess and tenderising the chicken. Stir well and let is cook on a low heat for about 5-8 minutes. Taste for seasoning and spice, if you need salt and chilli, add more Nicos Polle Polle© Spice Mix. If you need just salt sprinkle a little salt or if it is chilli, add a green chilli, which has more flavour. Once you have the right taste, add the fenugreek leaves, stir well and cook for a further 5 minutes. Garnish with coriander and enjoy your Nicos Polle Polle© Chicken served with naan or rice.
