Nico's Polle Polle Spicy Ribs

Have you ever fancied pork ribs and they have arrived to your table, chewy and stringy. Not the Frank Underwood style at all! Follow our Nico’s Polle Polle Pork Ribs slow cooked recipe for soft melt in your mouth ribs.

Ingredients:

  • 1kg Rack of Baby Back Pork Ribs
  • 3 Tablespoons Nico’s Polle Polle Spice Mix
  • 100ml good quality Ketchup
  • 2 small Red Onion
  • 1/2 teaspoon Ground Cumin
  • 1 tablespoon Chilli Sauce (Optional)
  • 2 Tablespoons Light Brown Sugar

Method:

Preheat the oven to 140ºC. If the rack of ribs is too large for your baking dish cut this down into half or ask you butcher to prepare this for you and cut into 4 equal parts. Season both sides of the ribs with a tablespoon of Nicos Polle Polle Spice Mix and place on to the baking dish. Cover the dish with two layers of aluminum foil and place in oven. The best ribs are slow cooked so it will take 3.5 - 4 hours to cook until tender so the meat falls off the bone easily.

In the mean time prepare a light sticky and spicy BBQ sauce, you can cheat if you like with a good quality BBQ sauce mixed with Nico’s Polle Polle Spice Mix. Although you will have 3 hours to spare and the sauce really doesn’t take to long to stir up. In a saucepan, add a little oil and add the onions. Sauté until translucent. Add in the cumin and Nico’s Polle Polle Spice Mix and stir well. Add in the ketchup and brown sugar and stir through. Taste the sauce and if it needs more seasoning add a little more spice mix. If you prefer to add chilli ad in the chilli sauce. Cook for approximately 2 minutes.

Once the ribs are cook, take out of the oven and brush over a generous amount of spicy BBQ sauce on all sides. Place the ribs on a rack and grill for 2 minutes on each side. Sprinkle over more Nico’s Polle Polle Spice Mix and enjoy with a cold beer.
