Nico’s Polle Polle Turkey Mince

The new year brings in new resolutions, which mean healthy food and a subscription to the gym. This recipe by Ashley Roberts from Optimum Gym is quick and easy to rustle up after a work out and it is super healthy.

Ingredients:

  • 450grams lean Turkey Mince
  • 2 Teaspoons Nicos Polle Polle Spice Mix
  • 1 small Red Onion
  • 1 small Bell Pepper
  • ½ cup Sweet Corn
  • 200g Chopped Tinned Tomatoes
  • Small bag of Baby Spinach Leaves

Method:

In a pan add a tablespoon of coconut oil and once melted add the turkey mince and then add the turkey mince along with the Nicos Polle Polle Spice Mix. Cook for approximately for 8-12 minutes and then add in finely chopped onion, peppers and sweet corn and continue to cook for 2-4 minutes. Add in the tinned tomatoes and heat through until simmering.

Serve on a bed of baby spinach leaves. You can steam the spinach if you prefer.
